As midwives we get asked all the time if it’s OK to eat eggs during pregnancy. Here’s an easy recipe to ensure your eggs work for you and your baby. Make sure your eggs are:
yolk cooked thorough
AVOID poached or soft boiled
ENJOY omelette, scrambled & hard-boiled
Did you know dairy and iron don't work well in the body together. Using almond/soya milk alongside the Vitamin C rich lemon juice with spinach, helps your body absorb maximum iron for your energy
and (if you’re pregnant), baby's growth.
1 Tbsp almond or soya milk
1 tspn coconut oil
1 handful washed spinach
juice of half a lemon
1 Tbsp olive/cocount oil
pinch of salt
pinch of cayenne pepper if you like HOT
salt and pepper to taste
Heat oil in a pan on medium.
Whisk eggs and milk and add to heated pan.
Whisk lemon juice, olive oil, salt and cayenne pepper. Wrap dressing around your spinach and place onto almost cooked omelette.
You can flip the omelette in half to blanket your spinach, or simply serve.
A sprinkling of iodised salt and pepper to your taste completes this perfect pregnancy
